Type of longganisa (or longaniza in Spanish) in the Philippines is quite varied and so does the taste. A more popular and distinct in taste is the one from Lucban, from the province of Quezon, with its garlic-rich flavor.
I couldn’t quite tell if the longganisang Laoag (from Laoag City, Ilocos Norte) is even close (enough) to the goodness of the Lucban variety. Apparently, two-piece isn’t sufficient, but it is certainly worth tasting over and over again. Another variety found in Ilocos is the Vigan longganisa which I think is better.
